Chicken Salad
When you have chicken left over or you just purchased a rotisserie chicken from the store, the quickest way to whip up something new out of something old is Chicken Salad.
Ingredients
2 cups Chicken, shredded or diced
1/4 cup diced yellow onion
1/4 cup diced celery
1/2 teaspoon celery salt
1/4 teaspoon paprika
1/4 teaspoon garlic powder
ground black pepper, to taste
1/2 tablespoon yellow mustard
1/4 cup mayonnaise
Directions
After dicing or shredding the chicken place in a bowl.
Dice the yellow onion and celery and add to the bowl with the chicken.
Sprinkle in the celery salt, paprika, garlic powder, and pepper.
Add the mayonnaise and the mustard in the bowl with all the other ingredients.
Mix all the ingredients until combined well. Taste and add more spice or pepper as needed.
Refrigerate for at least thirty minutes.
I usually eat my chicken salad on toasted sourdough with spring mix lettuce, or on townhouse butter crackers for a snack. Enjoy!
