Snowstorm Pancakes
When a snowstorm is in the forecast and you awake to snow falling and a wood stove going, the best thing to start your morning with is a cup of coffee and a stack of buttermilk pancakes.
Ingredients
1 3/4 cups all-purpose flour
2 tablespoons sugar
1/4 teaspoon salt
1/2 teaspoon baking soda
2 teaspoons baking powder
3 tablespoons cooking oil
2 eggs
1 1/2 cup buttermilk
Directions
Combine dry ingredients in a large bowl.
In a separate bowl, beat both eggs. Add buttermilk and cooking oil, combine until well blended.
Make a well in the dry ingredients and pour wet ingredients into the center and combine until the batter is lump free.
Heat a griddle or frying pan and coat with butter.
Spoon batter into cooking pan and flip when the pancakes start bubbling, then flip for another minute or two.
Set cooked pancakes aside and then repeat until all batter is used. Consider adding berries or chocolate chips as desired to batter.
