Tomato Cucumber Salad

Looking for a side that is quick, easy, refreshing, and healthy? Then, look no further. The tomato cucumber salad is a great side to enjoy with a variety of meals, from fish, chicken, pork, or beef.

Ingredients

  • Cucumber, sliced

  • Yellow Onion, sliced

  • Black Pepper, to taste

  • Italian Dressing, I prefer Ken’s

  • Tomato, grape or cherry tomatoes

Directions

  1. Slice your cucumber and onion.

  2. Layer cucumber slices and onion slices in a zip lock bag.

  3. Add black pepper and a generous amount of Italian dressing.

  4. Remove air from zip lock bag and place in bowl in the fridge to marinate for at least 5 hours, preferably overnight.

  5. Thirty minutes before eating, halve or quarter tomatoes depending on the size. For larger tomatoes, dice.

  6. Add tomatoes into bowl and toss with cucumber, onion, and dressing mixture that has been marinating.

  7. Serve with your meal and enjoy!
